Menu Monday

The RG beans were outstanding. I added onion, garlic, and some of my homegrown oregano. I’ll definitely buy them again.

In no particular order this week:

I’m planning on BBQing burgers one night as the weather is going to be fabulous. I don’t have any beef, though, in the freezer, so I may stop at Costco after the pool when I go this week.

I’m planning on a BLT night with homemade sourdough and avocado. I’ll cook extra bacon for the quiche.

I have extra-heavy cream, so I’ll try a quiche with bacon and Gruyère. The last one I made didn’t come out very well for some reason. It was not custardy but kind of dry. I’ll check the recipe; I may have the egg/cream ratio wrong. I’m going to use puff pastry instead of a regular crust, as I have some in the freezer.

I have chicken pot pies in the freezer, or I have chicken shredded, I can make my own.

I think I’ll cook up some brown rice and do some kind of bowl.

Other days, I’ll have to see what needs using up.( the beans with tortillas)

Today, I plan on staying home as I’m feeling a bit tired. The only thing I really need to do is get gas in the VW, but I’ll wait and see what I get done this morning. I like Mondays to be my reset day for the week. Plus, I like to do a full house dusting and tidying.

Here’s the Hokusai. I didn’t realize it was on canvas, but I still like it. Plus my newest orchid. I’m sort of obsessed with getting them to rebloom. I’m watching two that haven’t put any spikes up. I think I’ll take the one out of the pot and clean the roots. From watching YouTube, I guess it’s important to snip off the dead roots. I also have moss in my Amazon cart to buy, which is used for orchids.

Menu Monday, a little late!

First, a thank you to a subscriber who donated to my’ Buy me a coffee’. I was quite excited as this was unexpected and, of course, welcome. So thank you, very generous of you.

Last night we had nachos with beans, some beef, sour cream, avocado and salsa.

Tonight, I’m doing a Costco Veg barley soup with a cheese toastie.

Tuesday, not sure. This is my daughter’s late night, so something easy, maybe quesadillas. I still have some avocados, so that could work.

Wednesday, I have a freezer meal to use up, of orange chicken with rice.

Thursday, I think I’ll do some pasta with meatballs. I’ve been feeling like spaghetti. I have sauce I made in the freezer.

Friday, we did the takeout last week, so not doing that again. Maybe if it’s nice out, I can BBQ some chicken.

Yesterday, I went down to Mahany gym and did my weights. Then dropped off my books at the library. I considered going to Costco, but didn’t feel like it. I came home and baked the sourdough that was bulk fermenting in the fridge.

Today, I need to go to the bank and get my LLS. I’ve been putting it off, so today is the day. I might stop at Goodwill, which is in the same area.

I have some beans soaking, and I plan on processing them today. I soaked pinto and black beans, so we’ll see how it goes. We do like our beans, and especially Rancho Gordo beans. They have a new storefront in Napa if you’re in the area. I’m looking forward to going. Napa is only an hour and a half away, even a little less when there’s low traffic. So it could be a day trip. That would be fun for my daughter and me to do.

A bit of catch up!

The days have been busy, which is good.

I went to the gym on Sunday and then did some decluttering when I got home. I have a bag of books to take to the pet bookstore and a bag of odds and ends to go to Goodwill.

Monday, I continued decluttering out in the garden shed and a utensil drawer in the kitchen. I looked at things I’m not using, as I prefer to not have single-use things. I wrote out the menu ideas for the week too.

Mostly, using things I have in the freezer /pantry, which included using up the turkey chili, a box of cornbread mix, a jar of home-canned kidney beans, and some ends of cheese( cheddar and comte) to make a baked macaroni. Today I plan to prep what veggies I have and put them in glass containers. I have broccoli, beets, spinach, some lettuce, and carrots. I’m sure I’ve missed a few. My plan is to wash and put them in containers so I can see what I need to use. Too often, things in those new produce bags just get pushed behind things, and I don’t see them ( refrigerator blindness). To help, I ordered some containers from Amazon. They’re the brilliance Rubbermaid. Costco has these occasionally, but not right now.

We also had leftover Easter tofu, potato salad, and deli ham. I didn’t buy a ham since that would be too much for us, so I got some sliced ham, and it worked fine as a side dish. ( We mostly want the southern fried tofu with tartar sauce.)

After my labs on Monday, I went and got the Santa Fe smogged, so that’s done.

Tuesday, I headed to the pool, and it was quite mellow. I stopped and got some cash from the teller, as I want to give my son a few dollars to help offset the cost of the weed eater and the motorcycle class. I also stopped at Winco for spinach, broccoli, bananas, and a few other things. It was less than $40.

I haven’t gotten my kappa light chains back yet, but my other labs are all about the same. We’ll see:)

Update: just got them and they did go down 2 points. Not a lot and I hoped for more, but I’ll take it.

Today, I plan on getting the thrift stuff organized and put in the back of the car. Then I’ll go to town and drop some stuff off. I do have a big bag of books to go also.

I got the notice of the Fair Plan being changed, so that was good news. But paying for the new auto insurance added to my credit card balance, so be it for now. I just don’t have the income to pay it from my regular accounts. I think the only other annual bills coming up are DMV for Rubi and the truck in June. That’ll give me some time to concentrate on paying more of the CC stuff over a few months. sigh:( Still, I’m thrilled the auto insurance was reduced from the Allstate quote.

The rest of the week is open, so I’ll figure out whether I’ll do another swim or go to the gym. Because of gas prices, I’ll pick one or the other.

Menu Monday

I write a basic menu, mostly to keep me focused and to try and use up things that need using.

Last night was simple: beans and weenies with sauerkraut.

Monday- I think I’ll do something with tofu as I have 2 packages in the fridge.

Tuesday- I’m going to pull a souper cube of chili out of the freezer.

Wednesday- Chicken of some sort, maybe chicken pot pie?

Thursday- With the weather so nice, maybe I’ll get the BBQ out. I have some potatoes, so I could make a potato salad.

Friday- It might be a pizza night, as we didn’t do that last week. I might do homemade since pizza is expensive out, but I’d need to check what I have to make it. I think I’d need to get some mozzarella.

Saturday- TBD

I know I need some veggies and salad stuff, which I’ll get at Winco. I have some bell peppers in the freezer to use.

Today, I’m going to get the car washed and then go for a walk with my daughter down at Sierra College. There are lots of trails there, so we thought we’d give it a try. We’re planning on some sort of lunch out.

I also do sheets on Monday, so there’s that plus regular daily chores.

My son is coming over after work too, so that’ll be nice.

Menu Monday

We did really well last week, and I made most of the meals planned.

Last night I made a chicken parmesan because I had defrosted a pack of Costco chicken. I had to run down to the store for panko as I didn’t have any. Then I made a batter and fried the chicken breasts. I cut them in half first, but it was still a lot. They were really crispy when I took them out of the pan, but after I finished them in the oven with tomato sauce and mozzarella, they didn’t hold their crispiness. Any ideas? Maybe I should have just heated up the sauce and plated it right then?? Have you made chicken parmesan, and how did you keep it crispy? I followed the NYT recipe.

Anyway, probably leftover chicken today, and I may do some spaghetti on the side.

Tuesday- I want to use up some souper cube beans, so beans and cheese enchiladas( frozen).

Wednesday- tilapia and some side dish. Maybe a macaroni and cheese.

Thursday- Freezer cube meal. I still have some chicken and rice cubes.

Friday- I might make homemade pizza, although we had pizza this past Friday, so I may do something else. I do have leftover mozzarella, though, so ??

Saturday- something easy, maybe just some sandwiches.

I finished watching the first season of True Detective. It was absolutely great. Woody Harrelson and Matthew McConaughey were incredible. It’s on AMC, so if you have prime you have to add it. Each season is a different crime and detectives.

I didn’t read anything this week except a Mauve Binchy book, A Week in Winter. It was okay. I don’t have any holds at the library, so I might look at what’s new and put a hold on something.

I have another admin thing to do to change our Home insurance policy over to just my name. It’s showing Barclay as insured even though I’m on there too. So I guess I’ll brave the phone and see if I can get it changed. I do hate doing these things.

Like I said the other day, I’m not going to the pool because of the parking issue, but I will try either tomorrow or Wednesday.

Menu Monday

Last night, I made chicken/orzo soup from Rotesserie Chicken that I had frozen. There’s quite a bit left, so either that’s lunch or dinner.

I have the Costco dumplings, so I’ll do that with TJ’s orange chicken.

I plan on making a homemade pizza sometime this week. I found my 00 flour in the cabinet so I want to use that.

New Year’s Eve, we’ll do sub sandwiches of some sort. Either from the market or homemade, and I’ll get the ingredients.

One night, we’ll do tacos with ground beef, and I’ll also add pintos. I have at least 2 jars of pressure-canned beans left.

I’m still contemplating getting the electric pressure canner, as it would be much easier to use. However, it’s pricey, so I need to consider it. I do enjoy canning, so there’s that.

I used the Zojirushi bread maker yesterday for a whole wheat bread. It came out good, although I didn’t have the non-fat bakers’ milk, so the crumb was off some. I need to go to the store this morning, so I’ll pick some up and try another loaf. I always just use the dough setting and bake in the oven.

Absolutely no luck with camping reservations. I tried again this morning and didn’t get nada, zilch, zero. It makes you wonder who is getting these reservations, and whether they are using high-speed computers or multiple computers. Sigh…. oh well, all I can do now is check for cancellations since we are into 4th of July week.

Memorial Day and some menu ideas

Memorial Day is the day to remember those who gave their lives in service to this country. If you’ve read my blog long enough, you know my brother was killed in Vietnam in 1968. So young.

Menu stuff.

Last night we had another BBQ with hot dogs and macaroni salad, and baked beans.

Monday- ( Memorial Day)- I have chicken to grill up. I probably will do a side of salad with avocado with tomato.

Tuesday- This is the day I’m out almost all day, so I might order a pizza or see if my daughter wants to cook something.

Wednesday- Breaded cod with fries, both from the freezer.

Thursday- I need to check the freezer and see what needs using up. I might do pasta with pesto sauce and salad.

Friday- If we’ve had pizza already, I’ll just do something else.

Saturday- I think it’ll be back to BBQ. I have some veggies to skewer, and I will add tofu and maybe some steak bits.

My daughter and I had a wonderful brunch at High Hand Nursery/Cafe.- It’s quite a unique place as it it is a very posh nursery with absolutely beautiful plants, flowers and trees plus a cafe. It is very popular and you almost always need a reservation.

We both had Eggs Benedict. yummy.

Menu Monday

Last night we had corn on the cob and baked potatoes with lots of toppings and a small salad on the side.

Monday- I might do corn again, but on the grill, chicken sausages on the grill too. Boca burger for the veggie.

Tuesday- I defrosted some carne asada, and I’ll have that with a tortilla and toppings. I have beans too, so I’ll make up a bean burrito for B.

Wednesday- I have lots of eggs, so I think I’ll do brinner. Scrambled eggs, and I’ll do some potatoes on the side.

Thursday- I’ve been wanting to make some minestrone, and I got all the ingredients so I might do that.

Friday- Regular pizza night

Saturday- I think I’ll do another BBQ with steak and veggies. Tofu for B.

The week ahead looks good. We’ll know his blood counts by late afternoon, which will really determine the week. I have my appointment on Thursday, so I can’t do that day or Friday, but my daughter could do Friday if necessary. It’s wait and see again.

I’ve just finished my house reset and still need to sweep the kitchen floor.

Just a comment about Biden being diagnosed with cancer. He summed it up well, ‘that we all are affected by cancer’, one way or another. I just wish the orange man in the white house would give up his bashing of Biden. Biden did the best he could and took us out of tRump’s first disastrous term, especially dealing with the aftermath of COVID-19. Was he mentally competent? I’m sure he was until maybe this last year when the decline was evident. But look at tRump, he’s definitely not all there with his ramblings and impulses. Plus, Biden cherishes democracy, and tRump wants to destroy it in the name of righteousness. What a joke, a dangerous joke though.

Menu Monday

I spent the last day and a half trying to update my Mac Air 2015. It’s still not quite working right. I’ll have to check with my daughter about google chrome which is the one not working right.

Last night we had the turkey chili. There’s lots left over so I’ll freeze some.

Monday- Cinco de Mayo- I have carnitas with beans and rice. B will have a cheese enchilada.

Tuesday- Probably left over carnitas or the turkey chili

Wednesday- quiche of some sort as I have plenty of eggs.

Thursday- BBQ tofu/maybe chicken and a pasta salad.

Friday- Pizza

I just did a house reset and it really did need it. Little things all over and not tidied up. It took maybe 45 minutes to do.

I got an appt for Ortho but it’s not till June. Geez Louise, it’s a good thing I kept all my rehab exercises which I’m going to start today.

Simple Sunday on Monday

Yesterday was just an off day.

I went to the Auburn gym to do weights and then headed down to Costco. I had the motive to keep driving the Santa Fe to see if anything happened again. It didn’t. I plan on calling one garage today, though to see if they can run a diagnostic. I’m not sure if they will be able to do that this week, but I’ll try.

At Costco, I got coffee( the main reason), B needed Tylenol, and then I picked up eggs, bananas, and some other stuff.

It was a beautiful sunny day with temperatures close to 70 degrees. Sitting in the sun, it felt much warmer. Today, it’s raining, and it’s certainly fickle weather. Spring, I guess.

We are at T-6 days and counting down to Stanford. B will find out Friday what time to be at the hospital Monday. I’m guessing very early, as this can be a long surgery. He’s had his pre-op video appointments, and they all went well. Today, he has to get labs to check his hemoglobin and, if necessary, get a transfusion. I hope not, but we’ll do what’s necessary.

I plan on being home today and doing a house reset and some baking. I have a loaf of sourdough to make. I’ll put my starter back in the fridge after this as I won’t be making bread for a while after this. I’m also going to make a new recipe of Chicken adobo.

Tomorrow, I plan on going to Mahany gym and the library. I have a couple of holds at the library. Then I plan on swimming on Wednesday.

I’m thrilled at the huge turnouts for protests against the administration. It’s exciting that so many people came out to do that. I’m an optimist, so I think it will matter in the long run. What this administration is doing is trying to rewrite history and destroy democracy. It’s scary what is going on.

Menu for the week:

Chicken adobo with basmati rice. I have some tofu for B; plus, he’s not eating very much, which is worrisome.

Beans in the crockpot. My Ranch Gordo order showed up so I may make a new bean to me. Eye of the goat. I’ll check Steve Sando’s The Bean Book for a recipe.

Pasta of some sort. I have a TJ’s pasta alfredo in the freezer, so I may pull that out.

My daughter will be coming with us to help out with driving and navigating the hospital. My son is planning to stay here and take care of the cats. He still has to work most of that week but will stay here at night. The cats really like their routines so this will be somewhat upsetting to them. But it’s the best we can do right now.
