Menu Monday

We did really well last week, and I made most of the meals planned.

Last night I made a chicken parmesan because I had defrosted a pack of Costco chicken. I had to run down to the store for panko as I didn’t have any. Then I made a batter and fried the chicken breasts. I cut them in half first, but it was still a lot. They were really crispy when I took them out of the pan, but after I finished them in the oven with tomato sauce and mozzarella, they didn’t hold their crispiness. Any ideas? Maybe I should have just heated up the sauce and plated it right then?? Have you made chicken parmesan, and how did you keep it crispy? I followed the NYT recipe.

Anyway, probably leftover chicken today, and I may do some spaghetti on the side.

Tuesday- I want to use up some souper cube beans, so beans and cheese enchiladas( frozen).

Wednesday- tilapia and some side dish. Maybe a macaroni and cheese.

Thursday- Freezer cube meal. I still have some chicken and rice cubes.

Friday- I might make homemade pizza, although we had pizza this past Friday, so I may do something else. I do have leftover mozzarella, though, so ??

Saturday- something easy, maybe just some sandwiches.

I finished watching the first season of True Detective. It was absolutely great. Woody Harrelson and Matthew McConaughey were incredible. It’s on AMC, so if you have prime you have to add it. Each season is a different crime and detectives.

I didn’t read anything this week except a Mauve Binchy book, A Week in Winter. It was okay. I don’t have any holds at the library, so I might look at what’s new and put a hold on something.

I have another admin thing to do to change our Home insurance policy over to just my name. It’s showing Barclay as insured even though I’m on there too. So I guess I’ll brave the phone and see if I can get it changed. I do hate doing these things.

Like I said the other day, I’m not going to the pool because of the parking issue, but I will try either tomorrow or Wednesday.

Midweek Musings

We’ve had rain, but it’s more of a spring rain with temperatures in the mid-fifties. So kind of nice, really. I even saw a temperature of 70 for later this week. I’ll take it!!!

It’s supposed to rain off and on today, so I’ll see what I get up to. Yesterday was nice. I went to the Mahany gym, library, Costco gas, and Winco. When I got home, I started a split pea soup even though that wasn’t on my menu plan, but I felt like having soup. I added a few shreds of ham I had frozen, so it had a smoky flavor. It was good. I used up the split peas I had and that bit of ham, so I felt good about that.

Tonight I’m planning on the burgers as my daughter is home for dinner. I defrosted some rolls, and I have lettuce and tomato too. I don’t have a side planned but I’ll think of something.

My food budget came in great for February at $300, which is fantastic. Of course, we have been working on eating down the freezer and pantry, so that’s why. I plan on continuing this through March.

I got my ‘rewards’ coupon from my Costco card, so next time I go to Costco, there will be no out-of-pocket money. That’s kind of cool. I might think about whether there’s something special I want to get. I did see lavender plants last time, but those things come and go quickly, and I don’t plan on going to Costco till next week or the week after. They do have lovely orchids, which I’m a sucker for. 🙂

March will have some extra expenses as the VW and the Santa Fe both need smog certificates, so that will cost. Plus, both will need the registrations paid too. I have some $ in an envelope for the smog, but not all of it. Again, I’d like to get back to having fully funded envelopes for this kind of thing, but money is always budgeted and not lots left over. But I will keep trying. Oh, and our property tax needs to get paid. I guess it’s always something, right?

I’ve talked about in the past how I dislike change, right? When I find something that works, I keep it, like pretty much forever. My marriage lasted 55 years because we were a good team, always had fun together, laughed and loved, and were great parents. We’ve lived here almost 31 years, and I love it. After we left our house in Foresthill, which we built, my dream farmhouse, I was devastated that we had to sell because we couldn’t afford the mortgage anymore. So I guess once we moved here, it was like, that’s it for me. Plus, even though the house was pretty crappy, we transformed it into something we love. Barclay did most of that with me on the side, although back then, I did all the painting and yard work.

These pot holders were made by my son and me when he was in 4th grade as part of our Waldorf curriculum. Handwork was very encouraged in Waldorf school, and even though we homeschooled, I followed a strict Waldorf curriculum. So, as you can see, I don’t like to change things if they continue to work. For reference, my son is going to be 32 this year!! 🙂

Menu Monday

I did really well last week with using things up from the freezer. Last night we had Z’s chili with the homemade Rosemary Meyer lemon sourdough I baked. It came out great BTW. I have one more chili in the freezer, but I’ll wait on that for a few weeks. This loaf had nice spring and is delicious.

Tonight I have some frozen chicken to use. I’m leaning toward a casserole of chicken rice and some veggies. The NY Times recipe calls for the rice to be uncooked, so I’ll do that, and it’ll be easier.

Tuesday- I’m thinking burritos with frozen beans and adding cheese, etc.

Wednesday- I think this will be burger night. I have the beef defrosting in the fridge. I plan on using Frugal Girl’s recipe. I probably need to get some lettuce, but I can do that if I go to the pool this week and go across the street to Winco.

Thursday- I think spaghetti or ravioli with meatballs and a salad. I have a #10 can of tomato sauce, so what I might do is make up a big pot of marinara sauce and freeze it in portions. That would use up the can, and I’d have sauce ready to use.

Friday- We might order a pizza. I used up the frozen one< Home Run, which is a Detroit-type pizza. It’s good, but too big for us, so I won’t buy that again unless it’s the mini ones.

Saturday- TBD, not sure what I’ll pull from the freezer, maybe some tilapia.

My son is coming over to work on the barn some more. He took a big load to the dump last time, so he doesn’t need to do that this time. But he is working on decluttering things in there, which is great. Then my daughter and I are going to the pet bookstore and maybe get lunch or some sandwiches to bring home.

Monday and it’s raining.

Menus for the week will mostly be stuff from the freezer/pantry.

Last night I used up the frozen shrimp and sauteed some tilapia. We had a salad pack that was almost past use by date.

For lunch, I had a Souper Cube mac and cheese. That’s used up one more frozen item. My son was still here, so he shared it with me. He brought some chili he had made, so that’s in the freezer now, too.

Monday- I defrosted some chicken, so I plan on using that. I’m not sure what side I’ll have since there’s no salad, maybe potatoes?

Tuesday- I think I’ll have the turkey chili my son brought up with corn muffins.

Wednesday- With all this rain, I think I’ll do a soup of some sort.

Thursday- Breakfast for dinner with bacon, eggs, and hash browns. The hash browns in the freezer need to be used up.

Friday- I may order a pizza, the veggie from Round Table is our favorite.

Today is a home day with all this rain. It’s raining pretty hard out there this morning. I didn’t get to the Goodwill to drop things off, so that’s on hold till there is a non-rainy morning. My son did take a big load to the dump, so he’s really getting things around the barn cleaned up. All this crap around the barn should have been dealt with long ago, but it is what it is, and I’m thankful he’s taken it on. Of course, my daughter does the bulk of the stuff around here as she’s here and he’s not. I’m so lucky to have both of them here to help.

Monday menus, And Simple sunday late.

The day got away from me yesterday. I was doing some house chores, baking a sourdough loaf( jalapeno cheddar), and sitting in the sun. It was a very nice day.

I had a nice walk in the morning. Sunrise is now 7am, so I’ve been getting to the park at 6:30. Since sunrise is going to keep getting earlier, I’ll have to decide what my cutoff is for getting out. In the past I’d jump out at 5:30 am but I’m feeling too old for that.

Last night we had a frozen pizza and watched some more of Stranger Things. This season(4) is really intense, and the episodes are quite long. Still it’s keeping my interest.

Tonight, I might make a chicken tortilla soup as I made broth the other day. I also have chips I can use on top along with avocado.

Tuesday- this is my daughter’s later night at work, so usually I do something easy. I might do a grilled cheese. I also have leftover curry from the other night, I froze.

Wednesday- I need to look in the freezer and check what should be used. I know some pot stickers could be used with rice. I also have some tilapia I can grill up.

Thursday- Spaghetti and meatballs,salad

Friday- I might get takeout, tacos?

Saturday- Something from the freezer. I think I have some other soups frozen, so I’ll go check that out, plus I have lots of Souper cubes frozen of beans, chili, etc.

My son was here on Saturday and built the railing for the stairs off the sunporch. He’s been working on making sure I have handrails and grab bars for safety. It looks good. I just need to have him buy a piece of lattice to make it more attractive, and I can plant a vine of some sort to make it even nicer.

I went to Ace and had them match the house trim paint as the one I had saved must have deteriorated, as the color was definitely off. I haven’t opened it yet to see, but from the color on the top, it looks like a match. It looks like we have rain coming in so painting will have to wait anyway.

I have my labs this morning, and then it’ll be too late to get to the pool, so I plan on going to the gym and then the library. I have a few books to drop off and a hold to pick up.

I also see Dr. L this week, so that will change my routine as to the pool. I think I’ll plan Costco after I see him on Thursday. As usual, it’s coffee that I’ll need, plus some non-food things like toilet paper, paper towels, etc. I might pick up a ready-made meal there.

Here’s the jalapeno loaf. It looks good. I haven’t cut it yet, but I will slice it up this morning.

I finished the taxes, and it all looked good, and we didn’t owe, so that’s a win.

MLK Jr. Day and menu for the week

It makes me so sad to have this be MLK Jr day and all that he stood for and died for, and to have our country deteriorating in front of our eyes. I still believe in the ‘dream’ and that somehow we will find our way back to decency, truth, and democracy.

I read an article in the NYT, I think it was on a reporter in Minneapolis, and how on the ground there, it is much worse than it appears. She gave a couple of examples, and it was horrifying. I just checked, and it is the NYT and the reporter is Lydia Polgreen. You should read it if you can.

Like Samwise Gamgee says, ‘that there is still some good in this world’.

Onwward to the daily stuff in one small persons life.

Last night we had ham and Swiss cheese sliders while we watched ‘Stranger Things’. I think there’s one episode left in Season One. It’s better than I remember.

Monday- a freezer meal of one of the Souper Cube meals. I have a mac and cheese and a wild rice soup out to use.

Tuesday – I have some corn tortillas to use up, so I might make enchiladas and beans.

Wednesday- I have one frozen pizza left in the big freezer, so I want to use that up.

Thursday- I have some tamales in the big freezer, too, so I may do those as well.

Friday- Breaded cod and potatoes. I have 3 or 4 russets to use in the fridge, so either I’ll make some French Fries or do home fries. Plus, I have a baggie of cut-up bell peppers in the freezer, so I could add some if I do the home fries.

I am using the veggies I used the vacuum sealer on, and it seems as if it’s working great. I opened the shredded brussels sprouts, and they looked great. So I have lots of salad to use up this week, too.

Today is a home day, and I started some sourdough bread. The YouTuber I’ve been watching for sourdough tips is Kelly Welk. Very practical and useful information that she gives, plus she demonstrates how to do things. I didn’t have enough bread flour, so I added in White Wheat, so I’m not sure if that’s going to affect the density. For me to run out of flour certainly says something about where my priorities have been. I guess I haven’t made any bread in a while, except in the bread machine, and I wanted that to be half whole wheat. I’ll go to Costco to get their flour sometime this week.

I hope it’s a good holiday for you, and we must believe that good will always win out over evil.

What plans do any of you have today? In California, all the state parks offer free admission. That would be fun to go do.

Menu Monday and misc.

Let’s see, last night we had more coconut shrimp( Costco) and jasmine rice, and a pickled salad of radishes, cucumbers, and carrots. It was good.

Monday – I’m making a turkey chili, mostly to add two jars of home-made, pressure-canned kidney beans.

Tuesday- might end up left over chili but I’ll see.

Wednesday – I’m planning on roasting chicken with baked potatoes and a salad.

Thursday will be something with the left over chicken, maybe enchiladas?

Friday- I might do some pasta as I’m trying out a new pasta.

Saturday TBD

A beautiful day here. Sunny and not so cold. The pool was quite busy, but I got a lane right away, which was nice. I also went into Winco for a few things. Then it was straight home.

Menu Monday

Still raining, and there’s some flooding in the area. Not so much where I am, but the Yuba River is flooding, and there’s some flooding near Yuba Gap. i hope the rain lets up.

I again decided not to go out. Just not feeling it for some reason. I’m trying to go with how I feel daily, so that’s where it is today. I do need to get to the bank, so maybe I’ll do that later.

I’m working my way through all our Christmas movies, Die Hard, It’s a Wonderful Life, etc. I still have Muppet Christmas and Chevy Chase.

Wed-Christmas Eve- Our tradition is always Fondue with baguette, veggies, apples, and whatever else.

Thursday- Christmas Day- Cheese lasagna, Steak (for the meat eaters), baked potatoes, brussels sprouts, roasted butternut squash, and dessert?

Friday- I’ll probably do a pizza

Saturday- soup of some sort

I finally got my early am walk with my new Merrills. They are definitely a stiff boot that keeps my foot from moving too much. I can see why Chat recommended them for a foot fracture. Overall, my foot is better, and I do wear my Hokas in the house all day, and I think that helped. I haven’t worn my Birkies in a while because I think they didn’t support my foot enough.

I did a menu plan for the week so i have a rough idea of what I want to make.

Last night I made chicken enchiladas with green (verde) sauce. We had a salad on the side.

Tuesday- I’m going to make tomato bisque soup( from Costco) and some cheese sliders.

Wednesday- I have some mac and cheese I want to use up. I might add some tuna for protein.

Thursday – I think I’ll make a tofu scramble with veggies and nuts.

Friday – I’m not sure we’ll do pizza, so I’ll wait and see what my daughter wants.

Saturday- ?? TBD. maybe a burger of some kinda and fries.

Yesterday, I dropped my books off at the library and recycled batteries there, too. The gym was busy, but I found my way around without any delays. From there, I went up to Costco, mostly for coffee and a few other things. I think the food part was @ 100. I paid cash.

Today is a home day, and my son is coming over after work to visit. I don’t have any big chores for him to do, so it’ll just be a catch-up on what’s going on. Although he could put the cardboard in the recycle bin for me. Since he has the truck, it would be easier for him to do.

Menu Monday

I slept terribly last night, so I feel like I’m running on empty. I’m not sure the why of it. Most nights I sleep well, and then boom, I get a night that’s awful. There’s not a lot of rhyme or reason to it. I do keep track in my journal so I can look back and see if there’s some pattern. So far, I can’t see a pattern. Oh well, it is what it is.

Last night we had Rancho Gordo cranberry beans in the crock pot. We had polenta on the side.

Monday- I think I’ll pull some baked potatoes from the freezer and figure out a protein.( updated: I just had the potatoe since we had burgers for lunch)

Tuesday- left over cranberry beans, burritos probably, and I have some avocados to use up.

Wednesday- I’m thinking a curry with either chicken or tofu.

Thursday- I have some soup in the freezer to use.Vegetable Barley

Friday- pizza or pasta, I’ll wait and see what we feel like.

My daughter and I went to the cinema and saw ‘Rental Family’. The movie was fun, and seeing Japan made me swoon. The cinematography was amazing. So after that, we stopped at In and Out for burgers. I had a protein-style one and it was good.

Today is Tuesday, and my sinuses are acting up, so I’m going to stay home. I’ll just do some house things and work on the budgets for next year.
