Last night I made the spinach and puff pastry things. It was good, and I used up all the spinach, so that was a plus. My mother used to make a really tasty spinach pie. I’ve tried to replicate it, but haven’t had much luck. Maybe I remember it wrong. I know she would have used frozen spinach, but after that ?? This one I made had cream cheese. I’m thinking maybe she used ricotta.
Tonight- Caesar salad pack and breaded cod or tilapia. Whichever I can dig out of the freezer first.
Tuesday- I think I’ll put some Rancho Gordo beans in the crock pot. I have some tortillas and tomatoes to make a salsa.
Wednesday- I might do a breakfast for dinner with waffles and scrambled eggs.
Thursday- TBD
Friday- We didn’t have the pizza last week, so maybe I’ll do that with a salad.
Saturday- TBD
Today I’m heading to the pool and then an early lunch with my son. With the weather so nice, I want to clean up the entryways, as that is part of the Flylady zone this week. Plus, tidy the sunporch up too.
I am always impressed by people who actually figure out a whole week’s worth of menus ahead of time. Tonight after dinner I will look for inspiration ingredients for what I will cook for tomorrow/Wednesday night 🙂
I think I do it mostly to keep myself focused. Plus, maybe habit after all these years.
