Menu Monday

Happy St. Patricks day!!

We don’t really do the corned beef and cabbage. I like cabbage but mostly as sauerkraut or cole slaw. Tonight I’m planning baked tofu with sauerkraut and something else.

Tuesday- Probably tacos of some sort. I have some taco meat I made last week and froze so I’ll pull that out and open a jar of my home canned pintos.

Wednesday- I want to start using up the fish I have so I’ll either do salmon or cod. I have a box of Near East rice mix so I’ll make that up too.

Thursday- soup of some sort. This is questionable as I’m not sure what I have. I do have lots of ramen packs so that’s probably what I’ll do and add an egg and veggies.

Friday- I still have frozen pizza but I’m feeling like making homemade. I have an unopened bag of 00 flour so I could use that. plus I have mozzarella and some other toppings.

Saturday- I have a Trader Joe’s mac and cheese I want to use up so that may be it.

I’m home today and plan on doing a Monday tidy-up and home blessing day( which is just a few extra chores). Usually I like to go and do a quick clean of each zone and then something extra.

This week is mellow and no appts. Yay!! But I do plan on going to the gym and the pool at least once. I also want to get a few things at TJ’s like chili powder and ancho if they have it.

Our water bill comes out this week and then that’s it for March’s bills. I’m working on April’s budget this week too. I’m also hoping B gets in for that CT. He’ll probably need to go to Sacramento but that’s ok as long as it gets done. The sooner he gets it the sooner we’ll know how serious it is. 😦

Menu Monday

Using my master one month plan, this is what I have for the upcoming week.

Sunday ( last night ), was egg salad sandwiches. Easy and I didn’t feel like cooking anything.

Monday- I plan on a quiche using a store-bought pastry. I’ll do Swiss cheese, a few veggies, and I have some cream to use up too.

Tuesday- I’ll probably do black Beans. Either black bean soup or chili.

Wednesday- Homemade mac and cheese with salad. We’re still getting the romaine lettuce from the garden.

Thursday- I think a tofu scramble with potatoes. I still have half a bag of Costco’s Yukon gold potatoes so I want to use them up.

Friday- pizza of some sort

Saturday- TBD

Today, I have my labs and then I’ll head down to Roseville to get gas at Costco and go into Winco for a few things. I need some fresh produce, and I’d like to get the stuff for the Christmas lasagna. Then I’ll head up to infusion. B should be done by 10 am.

After we’re home, I’ll work on the kitchen zone and get some of that done. I’m planning on being home on Tuesday, so I can finish it then.

I also want to sit down and write up some goals for 2025. At this point, we have NO RV reservations as we don’t know how long B’s recovery will be. I’m hoping that we can at least plan a couple of trips starting in June. or maybe one longer trip. I guess it’s a wait-and-see situation.

Menu Plan

So this week, we’re starting chemo, so I’ll probably keep dinners even more simple.

Last night we had a Costco mushroom and truffle pizza. It was as good as a restaurant. If you see them at your Costco and if you like a thin pizza with mushrooms this is for you.

Tonight I’m grilling some chicken and then there will be leftovers for either soup or something. I am also going to bake one of our delicata squash with butter and brown sugar.

Tomorrow, I think I will plan a ramen soup so B has something easy to digest. I’ll probably add an egg to it too for some protein.

I’m going to cook some rice in the Zojuruishi and make rice bowls. I’m out of tofu so I’ll need to pick some up at our Holiday Market. I won’t be able to get to Costco till next week with everything going on. I have some spinach to use and mushrooms.

A freezer meal of some sort, probably lasagna that I made a while ago and froze.

Something with eggs since I have a lot in the fridge. Either a frittata or scrambled eggs with potatoes.

I will do one fish dish this week. I have some salmon in the freezer so I’ll do that with a rice pilaf.

Monday Musings

I’m baking another loaf of the Lost Dutchman’s sourdough. The baguette came out wonderful. This one is probably overinflated so it may not poof up. That’s okay. I have lots of starter and it’s really active. It did take almost 4 days to get fully active again so that’s something to keep in mind.

Today I’m meeting my library friends for coffee. One is recently widowed( from myeloma) and the other’s husband is in treatment for myeloma. Very strange.

This week is Velcade so that shifts how my week goes. And then in May, I have my colonoscopy. So that will change my week for sure. But you gotta do what you gotta do. Or, the fun of getting older. 😦

On the menu this week is

  • white bean soup with homemade bread ( the beans are Marcella from Rancho Gordo
  • grilled chicken/veggie burger with potato salad
  • falafels in pita bread or just tortillas if I don’t get to Trader Joes.
  • pesto ( from last summer) pasta and a salad of some sort
  • pizza night(maybe a frozen one if I’m lazy)
  • grilled shrimp with some rice or pasta
  • ?? something from the freezer or??

We’ve been eating out on the patio which we do all summer. Right now the weather is perfect.

I repotted a fiddle leaf fig yesterday, hoping it will spur it on to put out some new leaves. Does anyone have tips for that? I bought this large fiddle leaf from the nursery but it hasn’t put out any new growth at all.

Simple Sunday

Wow, lots of rain yesterday. This morning is still a little drizzly. Sadly, there is no Sunday walk but once I see the PT I’ll ask if I can even do a little. I don’t see them till near the end of the month unless there’s a cancellation. Definitely difficult for me but also don’t want my knee to buckle and then if I fall cause some other problem.

We did venture out in the rain to get the monthly Costco done. I was quite surprised it wasn’t packed. We found a place to park near the entrance and had no problem going down the aisles. We even got to the register without waiting. By the time we were leaving though cars were circling the parking lot because of the pouring rain.

Today I plan on doing the Flylady zone of the bathroom and I’ll add the bedroom too. I usually do these together as both don’t take very long. I also want to write down the meal plan for the week and see what needs using. We had freezer stuffed peppers last night and I also have some chicken enchiladas that I took out so I’ll have those tonight. I have some rice so I thought I’d make my favorite Greek lemon rice soup. Plus I have a lot of Meyer lemons that were given to me to use.

I have put a few things on Facebook market place I’m not using to try and sell. One is the Food Saver vacuum thing. If it doesn’t sell then I’ll put in a box for the Assistance League thrift store. My food saver hasn’t been used this year except when I did the corn this summer. I can just use ziploc bags for that this summer. I did use it when we were in the pandemic for oats and such but now I’m not interested in that kind of food storage. We gave the food bank all the Mountain House food I’d gotten during the pandemic and lots of cans of things I don’t need. That felt good to do that. The barn pantry now is officially closed and I’ll only keep bulk items in the house either in my jars or in the 2 under the bed bins. I still have plenty of beans, rice and canned goods plus my own shelf stable foods I canned. I’ll have to think about what might need to get stored out there as I have the nice bins I bought for food and I’d like to see them used for something.

This just arrived from Williams Sonoma. It’s my Christmas present from my daughter. I’ve been using it constantly and it’s really great. The rice came out perfectly. If you’re going to invest in Staub, be sure to wait for the sales. Most of the time you can get 50% off if it’s around Christmas.

This week I’m planning the gym once if I feel my knee can get me in there and I need to drop books off at the library. If I’m wearing the knee brace my knee does feel more stable.

Simple Sunday

Another rainy Sunday but that’s ok, we really need all the rain and snow we can get. We’ve received almost 3″ of rain so that’s great. Tomorrow looks sunny and I think I’ll plan on going to the rec center and then the library. I’m reading the new Ann Cleaves, Vera book. She’s a good writer and Vera is a very interesting character and in the books, she is a much more complicated character.

This week Flylady zone is the bathroom and I did that yesterday as there was nothing else to do. I do a swish and swipe daily in the bathroom.

I might pop into town to get those GCs so it’s done but I’ll have to see how the rain is later. Christmas is 2 weeks away so there’s still time although I’d like to give the one GC to the garbage guy this week. Hanukkah is next Sunday so I might do the $10 GCs then to like Starbucks and In n Out Burger. I also wanted to get a couple of small boxes of chocolates to give to.

Menus for the week include:

baked chicken and potatoes of some sort with salad

tofu curry with rice

breakfast for dinner, probably pancakes and scrambled eggs

mushroom quiche with salad

soup of some sort maybe lentil

Mexican themed something maybe enchiladas and I did buy the Costo cheese and chile tamales which are delicious.

Well, that’s it for a rainy day.

BOYCOTT GOYA FOOD PRODUCTS!

( just a reminder)….

We stocked up the prepper pantry this week with

  • 25 lbs of black beans. they’re not organic but grown in Washington state so I felt ok about it.
  • canned goods
  • coffee( 2 bags of Starbucks French Roast on sale at Costco)
  • Bob’s steel cut oats
  • TP
  • paper towels ( Costco’s giant package gets us through most of the year) We try not to use a lot of paper towels but sometimes you just have to.
  • Dove soap( 16 bars)
  • ramen soup( my favorite breakfast)
  • lots of single item things from Winco like Asian seasoning stuff, and olives
  • four more boxes of pasta
  • Another 10 bag of Calrose rice

The barn pantry looks really good and as soon as I get the Ikea pantry the other stainless steel shelves will go out there too.

Not much on the schedule this week, so that’s nice. With the weather being so hot, I don’t like having to go out much.

I went to Goodwill yesterday and Whoaaaaa… I got there at 9:45am. Dropoffs start at 10am. there were probably 25 cars already in line. By the time it started, I had probably 30 cars behind me. I guess it’s the season.

My order from Ikea ( from 2 months ago) showed up. So it’s another bamboo plant stand. And another small cabinet. I have this cabinet in our entryway and my plan was to put this one next to it. But then since we put the small TV in my office area, I decided I will put it under the TV and put ALL the DVDs in it. If they don’t fit some will have to go. So a little more organization.

I’ve been taking some pictures of the different rooms again and looking at the spaces. In my office area, the brown rug ( once I took the picture) looked really awful with the grey Ikea couch. So that was pulled out and I’ll have to see if I want a grey rug to replace or just leave the wood floor. Some of the pine boards need replacing so another project.

This week on the menu will be

  • individual Lodge quiches, a mushroom /cheese, spinach/ cheese)
  • Yakisoba with crispy tofu
  • burrito bowls with pintos, avocado, tomato salsa, cheese and tortillas
  • maybe something with beef like in a Japanese recipe from Just One Cookbook
  • spinach crepes with a bechamel sauce( maybe) depends how ambitious I feel!

BTW, I am loving the Zojirushi rice maker I got. It is fantastic ( thanks Laura from The Occasional Nomads who always has great suggestions and has lovely Japanese things in her home on Kaua’i.

My head is spinning with the political crap going on. With Trump getting Stone off the hook and out of his scheduled sentence, I just want to throw up. The corruption is so blatant it’s mind-boggling. Then he and Devos ( who is also evil incarnate) just wants the kids to go to school 5 days a week. Ok, you send YOUR kid or you go and spend a week in a classroom with 30 kids and tell me it’s safe. Yeah, right.

In other boring news, the Flylady zone is the bathroom. Not exciting but hey it still needs to get done.
